Over the weekend I had the opportunity to make some delicious appetizers for my friends holiday party. After searching through pinterest I kept finding myself going back to these beautiful cranberry crostinis. Honestly I’ve been eyeing them for awhile now, and thought a holiday party would be the perfect fit for them. Obviously I wouldn’t be myself if I didn’t make some changes to make them more my own, so yay for improvises!
Preheat the oven to 425 degrees F. In a bowl place 12 ounces of fresh cranberries, 1/2 cup granulated sugar, 1 1/2 teaspoons dried basil ( you could use fresh basil), and a couple tablespoons of balsamic vinegar.
Mix all of the ingredients, so everything is evenly mixed and coated.
Place the cranberry mixture on a parchment paper lined baking sheet, and roast them for about 15 minutes.
In a small bowl place 2 tablespoons olive oil and 2 tablespoons butter.
Whisk until everything is light and creamy.
Take one loaf of baguette bread and slice in about 1-inch thick pieces. With the butter/oil mixture evenly coat the top side of the bread and place on a baking sheet.
Bake the bread at 425 degrees F. for 5 minutes.
Once the bread has baked for the first 5 minutes pull them out of the oven. Flip all of the bread over, and butter the other side of the bread. Place a small slice of brie on top of bread and put them back into the oven for another 5 minutes. You can put the cheese on after you bake the bread, but we preferred the cheese to be warm and melted.
Once the bread is done baking, place a small spoon full of the cranberry mixture on top of the bread and brie. Serve immediately. My friend and I learned to make these right before your ready to serve them. If you try to reheat them in the oven the bread becomes a little too hard. These crostinis were a big hit and I hope you enjoy these as much as we did.

1 loaf of baguette bread

Mix until everything is evenly coated. On a parchment paper lined baking sheet place the cranberry mixture evenly on it. Roast in the oven for about 15 minutes. While the cranberries are roasting cut the baguette bread in about 1-inch thick slices. In a small bowl place 2 tablespoons butter and 2 tablespoons butter and whisk until their completely combined. When the cranberries are done roasting pull them out of the oven and set them aside. Place the bread on a another baking sheet and butter one side of them. Bake the bread for 5 minutes. After the first 5 minutes pull them out and flip the bread. Butter the other side of the bread and put a small slice of brie on top. Place back into the oven for another 5 minutes. Once the bread is done baking put a small scoop of the cranberry mixture on top and serve.
