Spicy Thai Noodles with Chicken

I had the biggest craving of something spicy, light and delicious, so after flipping through pintrest I came across spicy Thai noodles. As always I did some improvises to the recipe and it still turned out amazing. To go with this recipe I made some Thai tea with a twist, its creamy, spicy and as always delicious, and is the perfect match to cool down the spice from the noodles.

First boil one pound of linguine, while the noodles are cooking start cooking the chicken however you would like. For the chicken I seasoned it with salt and pepper, I put 3 cloves chopped garlic, a couple of tablespoons curry paste and teriyaki sauce. Cube the chicken into about 1 inch pieces.

While the chicken and noodles are cooking (or after if you don’t feel comfortable cooking 3 desperate things), saute 3 mushrooms and 1 zucchini that has be chopped into bite size pieces.

Next chop up a bundle of green onions, a good size handful of cilantro and some peanuts. If you have fresh ginger this would also be a good time to chop it up, I bout pickled ginger so I didn’t have to worry about preparing it.

Sorry this isn’t the greatest picture ever but it was the best one I could take for oil being in a pan. Anyways place 1/4 a cup vegetable oil and 1/2 cup sesame oil in a large skillet, and let it get hot on medium high heat. As soon as the oil gets hot whisk in 6 tablespoons honey and 6 tablespoons soy sauce. Once it gets hot place the noodles into the pan. While the noodles are soaking up the oils and frying them at the same time, toss in a tablespoon or two of red pepper flakes, as well as salt and pepper. Once the noodles have been in the pan for a few minutes toss in the vegetables and chicken and keep turning everything so it can bee evenly coated and so it can get hot.

Serve hot, and in a bowl. Place some peanuts, green onion, cilantro, and some ginger on top and enjoy. I hope this wonderful dish is as big of a hit with your family as it is with mine.

Ingredients:
1 lb. linguine
2 chicken breasts cubed
3 cloves garlic
Mushrooms
Zucchini
1/4 cup vegetable oil
1/2 sesame seed oil
6 tablespoons honey
6 tablespoons soy sauce
2 tablespoons red pepper flakes
Salt
Pepper
Green onions
Cilantro
Peanuts
Ginger

Chop 3 cloves garlic, the green onions, mushrooms, zucchini cilantro, peanuts and ginger (if you have to). Boil one pound linguine, while the noodles are boiling cook the chicken (how ever you please) and vegetables. In a large skillet place the vegetable oil and sesame seed oil into the pan, and let it get hot on medium high heat. When the oil is hot whisk in 6 tablespoons honey and 6 tablespoons soy sauce. Once the noodles are done cooking place them in the oil and allow them to cook. Salt and pepper to taste and place a couple of tablespoons of red pepper flakes, and give it a good stir. Let the noodles cook for a couple of minutes then toss in the chicken and vegetables and let everything get really hot. Serve in a bowl, and top with green onions, cilantro, peanuts, and ginger.
