Peanut butter cookies are my boyfriends favorite kind. I thought I’d start my baking/ cooking craze off with them since he listened to me babble about anatomy and physiology for three months straight. This recipe has taken me awhile to get right with adjustments and several trail and errors. With that being said these are softer peanut butter cookies, when you break them apart you won’t hear the snap sound, but you will get the wonderful taste of peanut butter.
Preheat the oven to 375 degrees F. Place 1/4 cup shortening and a 1/4 unsalted butter into the mixing bowl and cream.
Next add 1/2 cup packed brown sugar and 1/2 cup granulated sugar. Mix until sugar is combined with the sugar and shortening.
Beat in one egg.
Add a 1/2 cup of creamy peanut butter, and mix.
Lastly add 1 1/2 cups flour, 3/4 baking soda, 1/2 teaspoon baking powder, and 1/4 teaspoon salt. Mix the ingredients until the are completely incorporated.
Take a good size of peanuts and chop them up into small bits.
Place a good amount of batter into your hands and roll it into a ball, repeat this process until all of the cookies are made.
Once the cookies are all rolled place them on a un-greased cookie sheet. Next take a fork dipped in flour and press on top of the cookie both horizontally and vertically.
Sprinkle a little bit of the chopped peanuts on top of the cookies. Place the cookies into the oven for roughly 10 minutes.
Be sure to let the cookies cool all the way on a cooling rack before you put them away. I hope you enjoy these wonderful, light, delicious cookies as much as we do in my home.

1/4 cup shortening
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup creamy peanut butter
1 1/2 cups flour
3/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 375 degrees F. First take a small handful of peanuts and chop them to a small size, a little bit bigger then a minced size. In a mixing bowl mix 1/4 cup unsalted butter and 1/4 cup shortening together. Once blended add in 1/2 cup packed brown sugar and 1/2 cup granulated sugar, mix together. Beat one egg into batter, making sure its completely mixed in. Mix in a 1/2 cup creamy peanut butter, be sure to scrap the bowl so that everything is mixed. Lastly add in 1 1/2 cups flour, 3/4 teaspoon baking soda, 1/4 teaspoon baking powder, and 1/2 teaspoon salt, mix until you get a condensed batter.
Take a good amount of the peanut butter batter, place it in the palm of your hand and roll it into a nice even ball. Place the ball of cookie onto a non-greased cookie sheet, depending on the size of your cookie sheet you should be able to bake a dozen at a time. Take a fork and dip into some flour and press down the cookie horizontally and then press the fork down vertically, repeat this process to all of them. Once the cookies are pressed with a fork take a small pinch of the chopped peanuts and place them on top. Bake the cookies for 10 minutes and let cool on a cooling rack before putting them away.
